How do you convert jet fuel between gallons and pounds?
Multiply the volume by the fuel's density: Jet A is planned at 6.7 lb per US gallon, so 1,000 US gallons weighs about 6,700 lb (Avgas 100LL is 6.0 lb/gal). To go the other way, divide the weight by that density. Convert to kilograms with the exact 0.45359237 kg/lb factor and to liters with 3.785411784 L/US gallon, so the mass and volume figures always agree.

Fuel order — how many gallons to uplift
You need a target load and already have some aboard. Uplift = target − current, converted to whole gallons at the working density and rounded the way the truck bills.
